Story

Yamada Nishiki cultivated by Yuki Iizuka is evolving year by year. He improves the soil every year, learns new cultivation methods and tests his unique agricultural techniques.The rice cultivated in this way is very delicate. We dare to use this rice for Daiginjo, which requires a delicate fermentation process. As if hugging a baby, we brew it gently while being tense.The special sake has a gorgeous aroma and a pure taste.

Tasting Comment

Appearance

Bright crystal.

Nose

Gorgeous and refined aroma. Main aromas are apple and melon, linden enhances gorgeous impression. There are rice flower aroma and fresh green. Nice elegance from wet stone like minerality.

Palate

Fruits like soft sweetness balanced with refreshing acid. Dry finish with some Umami and minerality. It’s medium body.

Suitable temperature

General comment

It’s gorgeous, refine, and pure taste. I can see gorgeous flavor from yeast variety and delicate taste from making method so it good for lower temperature with medium size wine glass. It suits for aperitif also good for light meal.

Dish

Raw balloon fish with grated Japanese radish and Ponzu sauce, Caprese, Poached chicken with green onion oil sauce Chinese style, Pho (Vietnamese noodles) with coriander.
