Story

Masaharu Togo is an 86-year-old active rice farmer. Using Yamada Nishiki cultivated by him, the sake has a strong taste. The reason is his many years of experience, the traditional techniques that have been passed down for ten generations, and the fertile soil. Using his rice is of utmost importance for a gorgeous aroma and taste.

Tasting Comment

Appearance

Crystal with slight green tinge.

Nose

Rich and gorgeous. There are ripe apple and muscat. Some gorgeous impression like fragrant olive. Tarragon adds refreshing sensation and elegance from rice flour aroma.

Palate

I can see fruity sweetness that is balanced with voluminous acid and bitterness (from Umami). Dry finish with hot sensation of alcohol. Full body and good concentration.

Suitable temperature

・8~12℃

General comment

Rich and gorgeous taste that is made from yeast variety and making method. I’d recommend enjoy at cool temperature with big size wine glass because it is characteristic of gorgeous flavor and good balance of each relish at lower temperature.

Dish

Grilled sweetfish with salt, Duck with hollandaise sauce, Foie gras terrine, Prosciutto with melon, Sweet and sower pork Chinese style, Grilled Japanese Wagyu beef short rib with rock salt.
