- Our Story -
Location
Tsubosaka Sake Brewery is located in the mountains of Himeji City, in the southwestern part of Hyogo Prefecture. Hyogo Prefecture is known as the production center of Yamada Nishiki, which is called the "King of Sake Rice".
The ancestors began brewing sake in 1629. Then, in 1805, we moved to Yumesaki-cho in search of a better environment. Yumesaki-cho has a large temperature difference between day and night, and a cold wind blows in winter. This low temperature is the secret to brewing good sake.
"Sake that is a condensed version of the calm natural scenery."
That is Tsubosaka sake.
Rice farmers
Two farmers who make rice for use by Tsubosaka Sake Brewery. Even with the same rice, the finished sake will have its own personality.
Sake rice made by Mr. Togo has a strong taste because the taste of rice is easy to come out. It is the best sake rice for gorgeous sake and sake with a good taste.
The sake rice made by Mr. Iizuka is large and has a delicate taste. We can make a wide variety of sake depending on how you brew.
The rice that the two farmers make with the finished sake in mind every day is a wonderful thing that is indispensable for Tsubosaka.
Brewery
Our sake brewing is unique. The old brewery, built in 1805, has a ceiling designed to be higher than necessary, raising the heat and preventing the temperature in the brewing area from rising.
Beneficial microorganisms have lived on the pillars and clay walls of this warehouse for over 200 years.
They create a unique taste.
We do not make sake. Yeast makes sake.
We just create an environment that is easy to ferment.
This is "SEPPIKOSAN".
